Make Dry Bread Crisp Again in the Oven

Ingredients

  • Dry bread, baguette, or rolls
  • A little water
  • Optional: a clean kitchen towel

How to do it

  1. Preheat the oven to about 150 °C / 300 °F.
  2. Hold the bread briefly under running water or wet the surface with your hands. It should be damp, not soaked.
  3. Put it straight on the oven rack or on a tray.
  4. Bake small rolls for 5 to 8 minutes, baguette or bread pieces for about 8 to 12 minutes.
  5. Let it steam off for 2 minutes, then eat it while it is warm.

Why it works

Bread does not go stale only because it loses water: its starch structure also changes during storage. Oven heat can temporarily soften the crumb, while a little water helps the crust avoid drying out too quickly. As the surface dries, a crusty loaf can become crisp again. This improvement is temporary, so eat the bread soon. It is a useful rescue for bread that is stale or tough but not moldy.

Good to know

Use this only for stale, not spoiled, crusty bread. Check the whole loaf first. If you see mold anywhere, discard the entire loaf: cutting off a spot or reheating it does not make porous bread safe. Timing depends on size and oven, so check early and stop when the crust is dry and crisp. Handle the hot rack and bread carefully. Very thin slices will turn more into crostini; that can be useful, but it is a different result. For a whole loaf, cut it into larger pieces first so the heat reaches it faster.
