Ingredients

For 2 servings, use: 1 tbsp olive oil, 1 small onion, 1 red bell pepper, 1 garlic clove, 1 can chopped tomatoes, 1 tsp paprika, 1/2 tsp cumin, 3 to 4 eggs, salt, pepper, and optional parsley, feta, or chili.

How to Make It

  1. Dice the onion and pepper, then cook them in olive oil for 3 to 4 minutes.
  2. Add garlic, paprika, and cumin, and stir for 30 seconds.
  3. Add the tomatoes, season with salt and pepper, and simmer uncovered for 5 minutes.
  4. Make small wells in the sauce, crack in the eggs, cover the pan, and cook for 5 to 7 minutes.
  5. Finish with herbs, feta, or chili.

Why It Works

The tomato sauce reduces quickly, and the spices make it taste cooked for longer than it was. The eggs poach directly in the sauce, so you get a complete meal without juggling pans.

Good to Know

If the sauce tastes sharp, add a tiny pinch of sugar. If it gets too thick, loosen it with a splash of water. Serve it straight from the pan with bread, rice, or flatbread.
