You do not need anything special: one bowl, a deep plate, or even the empty vegetable tray works. The only rule is that it should sit firmly and close enough to your cutting board that you can slide scraps into it without stopping.
Set It Up First
Place the bowl before you wash the first vegetable or open the first package. Keep it on the side that matches your dominant hand and your knife work. Anything that is not going into the pan, pot, or storage container goes straight in: onion skins, carrot tops, herb stems, cheese rinds, or small packaging pieces.

You stop breaking your cooking rhythm for tiny trips to the bin. Your board stays usable, the counter stays calmer, and you can see at a glance how much waste has built up. It is especially useful for vegetable-heavy meals, where small scraps otherwise spread everywhere.
