How to Make It
Ingredients (1 serving)
- 2 slices good bread (sourdough, whole grain, or ciabatta)
- 1 ripe avocado
- 1 egg (for poaching)
- Juice of ¼ lemon
- Salt + pepper
- Chili flakes (optional)
- Olive oil for drizzling
Step 1: Poach the egg (start in parallel!)
Bring water + 1 tbsp vinegar to a simmer. Crack egg into fine sieve, wait 30-60 sec (watery white drains off). Slide egg into water, let simmer 3-4 min.
OR Microwave trick: Fill cup halfway with water, crack egg in, pierce yolk several times with fork (important!), cover with plate, microwave 1 min at 800W.
Step 2: Toast bread
Toast bread until golden brown (toaster or pan with butter – pan = crispier!).
Step 3: Prepare avocado
Halve avocado, remove pit, mash roughly with fork (not purée!). Stir in lemon juice + salt + pepper.
Step 4: Assemble
Spread avocado thick on toasted bread. Gently place poached egg on top. Season with chili flakes + salt + pepper. Drizzle with olive oil.
Step 5: Serve
Important: Cut yolk with knife → runs over avocado = perfect! Eat immediately (or bread gets soggy).

Time: 10 min vs. 25-30 min (driving to café + waiting).
Healthy: Healthy fats (avocado) + protein (egg) + fiber = keeps you full.

- With tomatoes, cucumber, or arugula (veggie boost)
- With sriracha, jalapeños, or harissa (spicy!)
Pro tips:
- Avocado MUST be ripe (slightly soft when pressed)
- Lemon juice prevents browning

- Thick is better: spread avocado generously!
