TL;DR
An impressive dessert in under 15 minutes β with just 6 basic kitchen ingredients. Firm on the outside, gooey on the inside like a lava cake.
How to do it
- Preheat oven to 250 Β°C (480 Β°F) β actually wait until it's hot!
- Mix 125 g flour + 190 g sugar + 3 eggs in a bowl until the batter is light and fluffy.
- Melt 125 g butter + 155 g dark chocolate together in a pan over low heat.
- Pour the melted chocolate-butter into the egg mixture and stir well.
- Pour into a greased springform pan (Γ approx. 25 cm / 10 inches).
- Bake for exactly 11 minutes on the second-lowest rack. Not a minute more!
- Let it cool, then dust with powdered sugar β done.
Why exactly 11 minutes?
That's the secret: the short baking time at high temperature makes the outside firm while the inside stays slightly molten β like a lava cake without the fuss. Even 1β2 minutes too long and it goes dry.
The 3 most common mistakes
- Baking too long (12+ min) β dry instead of creamy. Set a timer!
- Oven not preheated β uneven baking, timing goes off.
- Adding powdered sugar too early β it melts and gets sticky. Wait until the cake is completely cool.
Variations to try
- π Orange chocolate: 1 tsp orange zest + 2 tbsp orange juice.
- πΆοΈ Chili chocolate: 1 tsp chili flakes for an adult kick.
- π₯ Nutty chocolate: Fold in 50 g chopped hazelnuts.
