You need a stable cutting board, a sharp knife, and a piece of vegetable that sits flat and steady. For round vegetables like carrots or cucumbers, cut one side flat first so they cannot roll away.

How to Hold Your Hand

Place your guiding hand lightly on the vegetable. Curl your fingertips inward, like a small claw. Your nails point slightly toward the board, not toward the blade.

How to Guide the Knife

Let the flat side of the blade move along your knuckles. Your knuckles become the guide, while your fingertips stay behind them. Move the vegetable forward only a little after each cut.

Good to Know

Start slowly. A controlled cut is safer than speed. Use a sharp knife because it needs less force and is less likely to slip.
