Ingredients

Put the pressure items on the counter before you start: chopped vegetables, garlic, spices, oil, opened cans, measuring tools, and the pan or pot you need. This is not about making your kitchen look fancy. It is about avoiding the moment where the pan is hot and you are still looking for the onion.

How to do it

Read the whole recipe once. Then lay out the ingredients and prepare the items that move fast once cooking starts. Chop onions, garlic, and vegetables. Open cans. Measure spices roughly, or at least place them next to the stove. Only turn on the heat when this small setup is ready.

Why it works

Most cooking mistakes happen because too many things compete for your attention at once. The pan heats up, the garlic waits, the salt is still in a cupboard, and suddenly a simple dinner feels rushed. Mise en place removes that scramble. You can focus on heat, timing, and taste instead of searching.

The weeknight version

You do not need tiny bowls for every ingredient. For normal meals, use the 80-percent version: put everything out, chop the time-sensitive ingredients, and keep the spices visible. For very simple dishes, that is enough. The rule is easy: anything that would make you rush later gets handled first.
